Ivy Gourd Stir-Fry recipe


INGREDIENTS:
  • Ivy Gourd - 1 pound
  • Oil - 1 tsp
  • Mustard seeds - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Cumin powder - 1/2 tsp
  • Chili powder - 1 tsp
  • Garlic - 2 pods (chopped)
  • Salt to taste
  • Curry leaves (few)
PREPARATION:
  1. Wash the ivy gourds.
  2. Cut and discard both the edges. Cut them into fine slices.
  3. In a hot pan, pour oil. Add mustard seeds.
  4. When it splutters, add curry leaves.
  5. Add the chopped garlic and saute for a minute.
  6. Add the sliced ivy gourd.
    Sprinkle salt and cook it in low flame stirring occasionally.
  7. When it becomes soft add turmeric powder, cumin powder, chili powder.
    Mix well and cook for few more minutes until the ivy gourd gets coated with the spices.
  8. Serve with rice.
