Collard greens Stir-Fry recipe


INGREDIENTS:
  • Collard greens - 1 bunch
  • Onion - 1/2
  • Turmeric powder - 1/4 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Chilling powder - 1 teaspoon
  • Garlic - 2 pods (chopped)
  • Oil - 1/2 teaspoon
  • Mustard - 1/4 teaspoon
  • Curry leaves - few
  • Salt - as required
  • Water
PREPARATION:
  1. Wash the collard greens.
  2. Cut and remove the stems. Keep aside.
  3. Finely chop the leaves. Chop the stems.
  4. Pour oil in a hot pan. Add mustard seeds. When it splutters add curry leaves.
  5. Add the chopped collard greens, onion and garlic and mix well.
    Add salt. Cover and cook in low flame sauteing occasionally. Sprinkle water if needed.
  6. Add turmeric powder, cumin powder, chili powder.

    Mix well and let it cook for few minutes until the spices mix with the collard greens.
  7. Serve with rice.
